If you know anything about me, you know that my go-to Hatch green chile brand is 505 Southwestern. Living outside of New Mexico and its surrounding states, it’s hard to find legit Hatch green chile. When I moved to North Carolina I had more than one person think I was talking about jalapenos or bell peppers when I mentioned green chile.

I always used 505 Southwestern’s Hatch green chile sauce for my chicken enchiladas and their red chile enchilada/tamale sauce for the red chile enchiladas because they make the meals taste homemade. Great flavor and it takes the step of making your own sauce out of the recipe steps, which I appreciate. I haven’t made a batch of vegan green chile enchiladas since coming out with the blog, and I plan on making it soon to share with you. I have always been partial to green chile, but I want to come up with a red chile enchilada recipe to share both with you.

All their salsas are quality and range in heat levels and styles, so they have something for everyone. My favorites are the Hatch Valley Tomatillo Garlic & Lime Salsa and Hatch Valley Green Chile Medium Chunky Salsa, but they are all delish. Hatch green chile makes everything better and I appreciate they put it in their salsas, since most just use jalapenos.

Lastly, the reason I fell in love with them so many years ago. Their Hatch green chile is everything you need when you can’t get the fresh thing to roast yourself. Now I never have to worry about running out of this kitchen staple, thanks to their jarred chile. I just keep a jar in my fridge at all times and put it in almost all my meals. Growing up, Hatch green chile was available for any meal and having theirs in the fridge makes me feel at home. It’s nostalgic for me, but delish for me and everyone else.
