Having lived in the Twin Cities for years, I was so spoiled having the ability to go to The Herbivorous Butcher whenever I wanted to. You can read all about them here. You can imagine my excitement when I found out that NoButcher is a vegan sandwich/deli spot here in Las Vegas. Located in the Rainbow Springs Shopping Center off Rainbow Blvd, I always make a point to stop by if I am in the area. Living in Henderson made it difficult to get there on a regular basis, but it was always worth the stop. Major occasions are celebrated with NoButcher because I know it will hit the spot every time. From the deviled eggs and roasted garlic dip in a bread bowl for the Super Bowl, to getting my favorite pasta salad and Greek sandwich to celebrate getting my Real Estate License. I am never disappointed with the quality, taste, and customer service at the Rainbow location, which is why I keep going back. I was elated to find out they were building a new location near me in Henderson, off St. Rose Parkway. It’s minutes from my Real Estate office, so I knew I would be eating my body weight in that pasta salad of theirs as soon as it opened.

Everything I have ever had there has always been awesome. My go-to’s are obviously the pasta salad I keep mentioning. It seems like a simple pasta salad, but there is something about the combo of flavors that keeps me coming back for more. It has peas in it, and I hate peas more than anything so that should tell you something. Their egg salad is another thing I always must buy when I am there. The potato salad is made with red-skinned potatoes, which is my favorite way to make it, and all the ingredients marries perfectly together. My favorite sandwiches are the Greek because I miss gyro meat and tzatziki and their holiday sandwich that has ham, cranberry sauce, sweet potatoes, and herb goat cheese on it. You can’t go wrong with any of the sweets too, from freshly baked cookies to blueberry lemon cake, it’s all tasty.

I had the pleasure of going to the brand-new Henderson location today and it is beautiful. Phil, the owner, was the one that helped me, and he was great. I’ll be honest, I was a little worried when I heard NoButcher had been sold to new owners since you never know how that is going to go. I’m pleased to see that Phil and his wife Levina are keeping the menu favorites the same but also coming up with new sandwich ideas. Phil was kind, friendly, and excited to share how they were working to get a rewards program set up, and you will be able to link to your card when you use it for orders. He also told me about their brand-new app being launched for ordering and rewards, so I already downloaded it.

Overall, NoButcher is a fantastic plant-based business, and you need to go try them at either location. Trust me, it’s worth the trip every time. My bestie from North Carolina even got me a gift card there for Christmas because she knows how much I love their food.
