Bruschetta and Vegan Feta on Everything Ciabatta Rolls

This recipe was inspired by one I saw on Trader Jolene’s TikTok awhile back, where she air fried ciabatta rolls with mozzarella balls and bruschetta. It looked delish, and I wanted to try it with TJ’s vegan feta that I haven’t tried yet. I made it two ways by adding the cheese first to melt in the fryer, and the second one I added it at the end. Both ways are great and offer a different taste and texture with the cheese melted versus not melted.

You could easily make your own bruschetta and balsamic glaze, but I let Trader Joe’s take the lead for me on this one. Their fresh bruschetta and balsamic glaze make this meal so easy; it’s literally done in minutes. You can sure these as an appetizer by slicing the bread into squares or slices after toasting and before topping with the bruschetta. These are best served immediately but are quick, so they still make a great recipe for entertaining.

Now that I have tried the feta and loved it, I will be using it more in my recipes for sure. I have that viral TikTok pasta recipe on the blog where I made the cheese from scratch which you can find here. I want to make the same recipe using TJ’s feta to compare the two. The other recipe is amazing and worth the trouble, but it is a lot of work. It would be nice to have a hearty but quick pasta recipe like that in my back pocket for midweek meals. I’ll share that recipe with you once I make it.

This recipe could be done on a ciabatta baguette if you wanted to make a bunch of apps to entertain. I like all the everything bagel seasoning on these rolls, but you can still garnish them with the seasoning. These can be baked or air fried and I included both ways in the instructions below. Optional, add avocado before adding the bruschetta for add fats, protein, and fiber.
