Until I became vegan, I didn’t realize how incredible dates were. I use them for so many things now, including using them as a binder for sweet treats. The new fad is energy date balls like Frooze Balls or Enjoy Life which are both really good but making your own is just as good. I like making your own because you can add or take out whatever you want compared to store bought ones.

Because of how mainstream they have become, there are countless recipes on Pinterest or Google on how to make your own now. I have pulled together three flavors I really like and have seen a variety of ways online. I added more nuts and seeds so I can get the most omega-3 fats and protein in each one.

I decided to make Lemon Coconut, Almond Joy, and Pumpkin Pie balls because they are some of my favorite flavors and they are all different from each other. I included the measurements for all three flavors on the one recipe card because the instructions are the same for all three. These can be kept in a sealed container in the fridge for up to a month and in the freezer for longer.

Energy Date Balls

Energy Date Balls

Ingredients

Lemon Coconut Ingredients
  • 1 cup dates (I like Trader Joe’s organic pitted dates. They are usually the same price as the regular ones)
  • 1 cup cashews
  • ½ cup shredded coconut
  • 1 TBSP organic chia seeds
  • 1 TBSP organic hemp seeds
  • 1 TBSP organic flaxseed meal
  • Juice of one large lemon
  • Zest from one large lemon
  • Pinch of salt
Pumpkin Pie Spice Ingredients
  • 1 cup dates
  • 1 cup pecans
  • ½ TSP pumpkin pie spice (Trader Joe’s makes a great one)
  • 1 TBSP organic chia seeds
  • 1 TBSP organic hemp seeds
  • 1 TBSP organic flaxseed meal
  • ½ TSP Trader Joe’s vanilla bean paste (sub vanilla extract if you don’t have the paste)
  • Pinch of salt
Almond Joy Ingredients
  • 1 cup dates
  • 1 cup almonds
  • 3 TBSP cocoa powder
  • ¼ cup shredded coconut
  • 1 TBSP organic chia seeds
  • 1 TBSP organic hemp seeds
  • 1 TBSP organic flaxseed meal
  • ½ TSP vanilla bean paste/extract
  • Pinch of salt

Instructions

  1. Make sure the dates are soft, if not add them to a bowl with some warm water to soften them a bit. Drain them before adding them to the food processor.
  2. Add all of the ingredients to the bowl of your food processor and blend until the nuts are well chopped and a thick “dough” starts to form, about 3-5 minutes of processing. If the ingredients are chopped into super small pieces but the dough isn’t coming together, try adding a teaspoon of water at a time (up to a tablespoon or two) to help everything come together. You can use a high speed blender too if you don’t have a food processor.
  3. When the ingredients are well incorporated, remove the blade from the food processor.
  4. Take 1 large tablespoon of the “dough” and roll it into a ball in between your hands.
  5. Repeat with remaining dough.
  6. Keep the balls in the fridge for up to a month or in the freezer much longer.

Notes:

Prep time is for one recipe. All three recipes are made using the same instructions.
