Romesco Herb Tahini Wrap

I go through these phases where I make lavish meals for myself, but usually I want something quick and easy. Introducing the Romesco Herb Tahini Wrap. I could eat the romesco dip by the spoon, and the herb dip can be switched out for their garlic spread dip if that’s what you have. They are both amazing in this. This is another recipe of mine that can easily be subbed out with other toppings like romaine lettuce instead of spinach, or adding mushrooms, red onions, or cucumbers etc. The main thing that makes this wrap is the spread you put on it. Everything else seems to compliment it. I usually eat this with chips, but it would be good with anything. I want to try this spread out on pizza; I think it would be delicious as a sauce. This makes a great meal for lunch too; I just keep the tomatoes on the side until I am ready to eat it to put them on. Otherwise, it can get soggy from the tomato juice. Romesco Herb Tahini Wrap

Romesco Herb Tahini Wrap

Ingredients

  • 1 Lavash wrap (I like TJ’s brand and they have white and wheat options)
  • 2 Tablespoons TJ’s Romesco Dip
  • 2 Tablespoons TJ’s Herb Tahini Dip (Their garlic spread dip is also great if you don’t have the herb dip)
  • 1 Tablespoon olive tapenade (I like TJ’s version that is in the deli)
  • 2 Handfuls of fresh spinach
  • 1 Roma tomato diced
  • 4 Chicken-less chicken nuggets (I like TJ’s brand. You can also sub this out for deli slices like Tofurky turkey slices)
  • **If I use the Tofurky turkey slices, I will add a slice of Daiya American cheese to the wrap.

Instructions

  1. Air fry the 4 chicken-less nuggets at 370 for 15 minutes, turning halfway. Let rest for a couple of minutes before dicing them up into cubes. If using deli slices, skip this step.
  2. Mix the romesco dip, herb tahini dip, (or garlic spread dip) and olive tapenade together in a bowl.
  3. Spread the mixture onto one side of the lavash bread, getting as close to the edges as possible like you would a slice of bread.
  4. Spread the spinach out across the wrap, covering the wrap. Sprinkle the tomatoes around so they are all over the wrap as well.
  5. Sprinkle the chicken pieces around or lay out the deli slices and cheese if using those instead.
  6. Gently roll up the wrap, being careful to keep everything contained. I like to treat this like I am rolling up sushi by slowly rolling this up tightly as I push everything into the wrap.
  7. Cut in half and serve with chips, soup, salad, or fruit.
