This is a great appetizer but also makes an awesome light meal for days you don’t want to make something difficult. I forgot to put the Everything but the Bagel Seasoning on these until after I had taken the pictures, but it really ties this all together. I like using Trader Joe’s vegan cream cheese, but you could use any vegan cream cheese of your choice. I know some people aren’t a fan of the TJ’s version, but I like it especially with this meal. Feel free to switch up the flavor or type of balsamic vinegar or glaze, they all taste great with this. I used the two sample flavors I got from the Monadnock Oil & Vinegar store when I lived in New Hampshire and they are both delish. This recipe is almost not even a recipe with how easy it is. Tomato Basil Appetizer

Tomato Basil Appetizer

Ingredients

  • 2 large beefsteak or heirloom tomatoes
  • 6 TBSP vegan cream cheese (I like TJ’s plain cream cheese, but any will do)
  • 12 basil leaves depending on size. They should be large enough to cover the tomatoes
  • 2 TBSP olive oil
  • 2 TBSP balsamic vinegar/glaze
  • Sprinkle of Trader Joe’s Everything but the Bagel Seasoning
  • Dash of salt and pepper

Instructions

  1. Wash and slice the tomatoes into thick pieces, it’s usually about four slices to a tomato. Spread the cream cheese on each tomato, sprinkle the EBTB seasoning and salt and pepper onto the cream cheese. Top them with the basil leaves and drizzle the olive and vinegar all over the tomatoes and basil. Enjoy!
