Greek Salad with Homemade Croutons

Growing up in New Mexico, Dion’s Pizza Greek salad was a staple whenever we ate there. Since traditional Greek dressing usually has cheese and anchovies in it, I decided I needed to figure out how to make my own. I was inspired to make this thanks to the incredible new vegan feta from Trader Joe’s.

Most store brand croutons have milk in them, so I decided to go all in and make the croutons to go on this salad. You can find that recipe here. They take just minutes to make and can be stored for up to two weeks, so you can make them in advance to prepping the salad.
