Vegan Green Chile Chicken Enchiladas

Growing up in New Mexico, enchiladas were a staple in most if not all homes. I was always a green chile over red chile girl and I realized I hadn’t made a recipe for the blog. 505 Southwestern was kind enough to send me a goodie box over the holidays and I knew I needed to use the enchilada sauce and roasted green chile in an enchilada recipe.

This recipe is easy to make and feeds plenty of people or makes great leftovers. They taste just as good heated up which is something I look for in a recipe. I used Sweet Earth chik’n pieces and I like the texture the best out of all the name brand chicken strips. The only store in my area that carries these only had one eight ounce pack, so I had to fill in with Gardein strips. They were good, but Sweet Earth is the way to go for this recipe.
