Yet another recipe I found on TikTok that I knew I had to make myself. This recipe is thanks to Baked by Melissa and it’s a new favorite of mine. This salad is easy to make, packed full of flavor, and can be whipped up in minutes. I ate this with tortilla chips because that’s how I saw it being eaten, but it would be great with cut veggies as a dip. I wont to top fried tofu with it next time. This would also be great on top of tacos or in burritos. I made a reel on Instagram and a TikTok showing how I made this if you are interested in seeing it live. TikTok Green Goddess Salad

Ingredients

Dressing Ingredients
  • 3-5 cloves of garlic (I like more garlic, so I do five cloves)
  • 1 small shallot
  • Juice of two lemons (About a 1/3 of a cup)
  • ¼ Cup olive oil
  • ½ Cup raw cashews
  • ½ Cup raw walnuts
  • 1 Cup fresh spinach
  • ¼ Cup green onions
  • 1 Cup basil
  • 1 TBSP hempseeds
  • ¼ Cup nutritional yeast
  • 1 TBSP Trader Joe’s green goddess seasoning
  • ½ TSP garlic powder
  • Pinch of salt and pepper
Remaining Ingredients
  • ½ Head of cabbage, finely diced
  • 5 Persian cucumbers, diced small
  • ½ Cup green onions, diced small

Instructions

Instructions
  1. Dice the cabbage, cucumbers, and green onions and add to a large bowl.
  2. Add dressing ingredients to a blender or food processor and blend until smooth. Adjust seasonings as needed.
  3. Add dressing to veggies and toss until fully coated.
  4. Serve with tortilla chips, veggies, tacos, burritos, or fried tofu.
  5. Store leftovers in sealed container for up five days in the fridge.
